Breakfast Sandwiches


Here are the breakfast sandwiches that I keep on hand...yes I said I keep them on hand, meaning I make about a dozen ahead of time and keep them in the freezer, for a great quick, fast, hot breakfast.  Very simple...they taste just like an Egg McMuffin, but without all the unpronouncable ingredients.  YEAH! So for example, theirs uses enriched flour, I am using 9 whole grains, mine has much less sodium, theirs has 580 grams of sodium without adding any meat, like sausage.  I use real cheese...who knows what to call theirs.  And I can store mine in the freezer...and when you really think about it...if you are grabbing yours breakfast sandwich from home...you will also stay away from those greasy fried potatoes.

So let's get started.  I use a little bit of butter on a paper towel and grease the inside of the muffin tins.  Put 1 large egg in each muffin cup.  Bake at 350 degrees for about 20 - 25 minutes.

While the eggs are cooking in the oven grate your cheese.

After eggs are cooked I place whole grain english muffins on cookie sheet and put in the oven to toast them up a bit.










While English muffins are toasting up, I heat up some turkey sausage.  These are great just as egg & cheese sandwiches if you don't want the extra calories, but I enjoy the added sausage.



Then it's time to put the sandwiches together.
You can eat them warm right now, or wrap each sandwich individually in plastic wrap, place sandwiches in a large ziplock bag and place into the freezer. When you are ready, just take out of the sandwiches from the freezer and warm in microwave...delicious!

  3. How long and at what power do you microwave them. I know microwaves vary but I'd like to know where to start. These will be great! So excited to try them

  9. You know when I put them in the freezer, my family has them gone before the month is over...so I haven't tested the length for more than 4 weeks.
